Eva's PearlThe grapes for this sparkling wine is grown on Højbakke by Nakskov, an area which faces the Langelandsbæltet and one of the few places in Denmark with a unique climate gives grapes a lot of flavors.Soil is the old seabed composed of light sandy loam on clay.Wine is made in Højbakke vineyard which is adapted to modern principles.This sparkling wine is composed of varieties:Orion originally from Germany and introduced in Denmark in 1997. This grape gives a fruit-rich wine sauvignon blanc style and Zala Pearl originally from Hungary and introduced in Denmark in 1997. This grape gives a good flavor with mild muscat.The grapes are harvested in late September from sticks planted in 1999The wine is first fermented on skins in 2 days and is then fermented finished in steel tanks. The fermentation of white wine is then bottled fermented for 9 months.This sparkling wine is made entirely, champagne method and is slightly sweet."Champagne"is suitable for aperitif, seafood, chocolate and desserts.
